I wanted to change path.data setting for each node in my cluster (6 data and 2 master nodes). Is it possible to do this change without full cluster restart (if any way I can restart nodes one by one and keep cluster running)? Also is it possible to change data path while indexing/searching is in progress?

Yep. Just do one at a time.

Not an ideal way to do it if you can avoid things.
