Is it possible to exclude certain hours or only include certain hours over multiple days? Say we wanted to only search for events that happened between 9-5 every day but exclude those that happened at 5:30 for this particular query? How would we accomplish this? ---

I think you can use the query bar to filter the records by time, so the data won't show up in the visualizations. You'll basically see gaps in the charts for the data outside of that 9-5 range. If you want that time range in the chart to get skipped though (so that the data is kind of compressed together), that's not possible. ---
