Currently I am using Kibana in AWS-Elasticsearch. Is there any chance while creating index I can change the default number of shards?

This is a question specific to AWS-Elasticsearch and what this hosted service allows you to change - it's hard to give a general answer to this.

What I meant to say is this isn't an AWS-Elasticsearch forum. AWS support can probably help you.
In general - you can specify this by using a template with these settings (see [How change default number of shards](https://discuss.elastic.co/t/how-change-default-number-of-shards/117985))
