What field in Metricbeat will be able to tell me the thread count per server or will be able to use to calculate this?

I'm not sure what thread count are you looking for, can you be more specific about it please? One thing I can think of is jolokia metricbeat module and it can be used to monitor java applications and get some thread count information.
