Is there any way to change the $ format into ₹ format ...

We don't have a great support for this, but I have worked on our number formatters a bit and might be able to help. We don't have any support for specific currency symbols in our formatting system, due to its design. So your options are:
- Use the currency format only in specific apps like TSVB that have control of the formatting
- Contribute this to our Numeral fork: [https://github.com/elastic/numeral-js/](https://github.com/elastic/numeral-js/)
- Create a Kibana plugin which registers a number formatter that does what you want
