Working with the Twitter input and was wondering if there is a way to display images and/or videos that are part of a tweet?

You can derive images using the Image [field formatter](https://www.elastic.co/guide/en/kibana/current/field-formatters-string.html) in the Index Pattern settings. The value is encoded, so you won't be able to do example what you're looking to accomplish unless you could derive a URL based on the ID or something within the tweet.
