I need to upgrade the Elasticsearch from 7.9 to 8.\* due to vulnerabilities. what is the most stable version of Elasticsearch to upgrade?

The latest and the stable is [8.12.0](https://www.elastic.co/downloads/elasticsearch)

It is always the latest version. Note that you need to upgrade to 7.17 before going on to 8.x.
