Why do some tags appear in filter options in Kibana, while some do not?

See attached image -

I have some metrics data coming through with tags for things like "Stack," "parameters," "methodName."

For some reason, some of these tags are available for filtering and some are not. I have tried writing custom queries to get around the UI and these also do not work. Is there some requirement of custom tags that is making them not searchable/filterable here?

What is the mapping in your index of the fields that are missing?
