Beats not working on 6.3.1 but did on 6.3.0

I deleted all old index templates.

When 6.3.2 comes out should I delete the 6.3.1 templates?

Deleting the templates from 6.3.0 isn't required. If you inspect them you will find that they only apply to indices matching metricbeat-6.3.0-*. As of 6.0.0 templates and indices contain the version number to help make it easier to upgrade without running into conflicts.
