Is there a way to edit the settings of the autogenerated Ids in Elasticsearch, like the length of it, specific syntax etc? and is it possible to make Elasticsearch generate all ids even if some documents have the id set when bulking?

No, there is not.

If a document ID is set this will always be used, although it may be possible to unset it using an ingest pipeline (I have not tried).
