Is it possible to add a timestamp field to each document when created or last updated? Elastic version 7.8. I need to know last time document was updated.

There is, you need to add it yourself. You can do that using a pipeline like this one, or use Logstash or whatever client you are using to send the data to Elasticsearch with.
