I guess I was unaware, but does Elasticsearch still create indexes and save data to string field types by default to an Index that does not have a template defined at all?
Yes, it uses dynamic mappings - https://www.elastic.co/guide/en/elasticsearch/reference/5.0/dynamic-mapping.html
