You can find the compatibility matrix at Elastic Support Matrix | Elasticsearch.
I don't see sth about Windows Embedded Standard in there but maybe you can just try with a windows version of Filebeat and see if it works. However, even if it works I'm not sure if you can considered that "officially" supported.
