information of how many events per second does logstash handle ?
Obviously, it depends of the cluster and the size of the event. Let's
pretend that all events are json file of 10 lines. Futhermore, let's
have a cluster of 3 nodes with a 8 Gb RAM for instance.

Logstash instances don't form clusters so I'm not sure what you mean here. Are you by any chance talking about Elasticsearch?
