What should be the ideal memory setting for 16GB elasticsearch nodes? We don't have the servers with 64GB to set the memory to less than 50%, say 30GB. Whether 8GB to 12GB is fine?

Applicable for data nodes. You can increase that ratio for master nodes and coordinating only nodes.
