Is there a way to calculate a metric based on a query instead of using the options presented in kibana? To present in a dashboard. Like a sum of a value, but with a query written.

I don't believe this is currently possible. You might consider opening an enhancement request with a description of specifically what you are looking to do at: https://github.com/elastic/kibana
