It appears that the Nginx Ingress Controller Logs integration - version 1.2.0 - is not working properly.
The logs are being collected by k8s from the nginx-ingress-controller pods [which default to outputting the error.log to stderr and access.log to stdout] and written to the container logs location /var/log/pods/default_nginx-ingress-controller*/controller/*.log**
