Spaces between every letter from .log files on Windows

As the topic says, I have several .log files that are sending data from Filebeats to Logstash / Graylog. Within Graylog, all of the lines for these files have a space between every character, like this:

Interestingly, when I paste the text here, it formats it correctly. May be a problem with Graylog?

Modified the filebeat.yml to tail the log files, no success. The logs still come in formatted with spaces between every character. Is anyone else seeing this?

Any ideas? Happens for all log files from this particular vendor. Do I need to validate the encoding of the log file? It seems ok.
