What does Watcher include in Elasticsearch? I haven't seen a dedicated chapter in the documents.
No. It doesn't specify what the watcher can do.
Have you tried googled? loads of examples of what watcher can do..

I read it before and I guessed that watcher is some sort of alerting. But why haven't you specifically written it down in the reference documents?

Alerting is Watcher. Watcher is the previous name for it.
