Probably only a difference in your sanity ... actually, I have no idea and doubt much difference (others will comment, I'm sure), but in my opinion, Linux is the simplest and makes your life easiest
Docker is great for testing, running many versions, having several nodes or moving them around, etc. but especially now with embedded Java, Elasticsearch is just so easy to install & run on normal Linux that Docker adds complexity with no benefit to me.
Windows is, well, Windows
