Backups of Nodes?

If I have a cluster of 3 Nodes, primaries and replicas distributed, and I
would like to back up the data on S3 for instance, do I have to backup all
3 nodes? Can someone elaborate?
What if all my nodes are in the same geographical zone, and the whole zone
is down?

If you are using ES 1.x, you can use the snapshot restore API. Quick
instructions:

Install this plugin on all nodes:

https://github.com/elasticsearch/elasticsearch-cloud-aws

Then in your elasticsearch.yml file (on all nodes), setup your AWS/S3 credentials:

cloud:
    aws:
        access_key: your_access_key
        secret_key: your_secret_key

I would like to understand how it works, is there any explanation on how
this works, the link seems like just a setup.
