Could I move legacy indexes data to data stream

I have ELK in aws elasticsearch 6.8. Now a created new ELK cluster 7.9. I want move some indexes by snapshots to cluster 7.9 . But new cluster use data stream for store indexes. How I can did it? Why? I have indexes which living 60 days and I wan't wait this time when new cluster ingest this.

Is this the aws service, or running on ec2?

My old ELK this is AWS elasticsearch service and I am able make snapshots. My new cluster there is my own servers.

You don't need to move things to datastreams if you don't want, you can just restore your snapshots to the new cluster.
