Any idea how can I:
a) remove
b) change
field that has been defined as a timestamp?

You need to recreate the index pattern to change the field that you've set as the time field for that index pattern.
ok and by recreate you mean create a new one, or download backup, change manually and upload?
I'd like to keep all index id's the same
Delete and create a new one. You can save your index id somewhere (Notepad) and then use the Advanced settings when creating the index pattern again and set the ID to the old one.
