check the reference: Rollover | Elasticsearch Guide [8.3] | Elastic

Go to Kibana --> Management --> Index Lifecycle Policies and do the sets there.

I think there is a misunderstanding there about the term rollover what the OP means is a rolling upgrade e.g going from 8.2.0 to 8.3.0. I replied to the linked original question.
