I downloaded Elasticsearch onto my windows 8 and unzipped

I can only start the elasticsearch instance by double clicking on elasticsearch.bat which is in the bin directory. How can I run it as a service in windows 8?

When I double click on elasticsearch-service-mgr.exe, it says "the specified service doesn't exist as a service"

You can't just run a .BAT file or any old .EXE file as a service. Windows services don't work that you. You can use a utility like the non-Sucking Service Manager (NSSM) or Microsoft's non-free SRVANY utility to run an arbitrary program as a service, but you may find that you don't get very "graceful" stopping behavior.
