I am a junior year undergrad student interested in contributing to kibana and beats. I'm familiarizing myself with the projects and was hoping if there are any project ideas available to work on for a beginner.

Thanks for your interest! While we are always looking for contributions, I don't think Kibana or Beats will be part of GSoC this year, but we might try with other repositories like EUI (though I would wait for an official announcement).
Similar to most other repositories on GitHub, good first issue is probably the best starting point.
