I run the elastic stack on docker, I will have approximatively 200 indices (200 shards) of 25gb.

You will probably want to start at 16GB.

Just to be sure, the JVM heap requirements is proportional to my index size or more by indexing rate ?
I am making some test with juste 512mb of JVM heap and I don't have a problem for indexing more than 300.000 documents/minutes and no lag for searching them (but I have just 30gb of documents)
