Is it posible to display y axis as a percentage? I can find this setting in other visualizations under the "Metrics & axis" panel but I can't find it using the lens visualization.

This is currently not supported in Lens. It is planned to add that feature in a later version - this is the Github issue to track the progress: https://github.com/elastic/kibana/issues/57389
