Is it possible to plot p90/p95/p99 percentile of a numeric value in Kibana, if so how to?

Yes, this is possible through the "percentiles" metric aggregation. If you create a visualization (such as metric, data table, bar chart), then you should be able to select "percentiles" as the metric aggregation and configure it to show the 90/95/99 percentiles.
