after reindexing all the index settings and mappings are being dropped and a new index is created with default settings and mappings. Can I somehow keep my old settings and especially mappings in a new index?
That's by design.
Just create the new index with the settings and mapping you wish (could be the old ones or totally new) and then reindex.
