Apm agent inserts to Elasticsearch many fields that I don't need, is there any way to remove those fields?

You have a couple of options:
- Define an ingest node pipeline: https://www.elastic.co/guide/en/apm/server/current/configuring-ingest-node.html. In the pipeline you could use the remove processor to remove fields you're not interested in.
- Define processors in the APM Server configuration: https://www.elastic.co/guide/en/beats/filebeat/current/filtering-and-enhancing-data.html. Similar to above, you could use drop_fields.
Out of curiosity, which of the fields that you are not interested in?
