I would like to reset my Elasticsearch Engineer (On-Demand) environment for me to re-do the labs.

Hello! If you still have lab time available and want to reset the lab, please reach out to training@elastic.co

However, if your lab has expired, unfortunately the lab time cannot be renewed or extended. If you want to continue practicing the lab exercises, you can create your own lab environment using the content learned from the course to test your knowledge and skills.
