Set new colors for the Default Color palette

Using: v 8.17.4
I would like to create a new color palette or update the default color palette with my clients brand colors.
I can see I can edit a panel (pie chart) and click on the Color mapping. I can choose from the palettes set colors or choose a custom color. If I choose a custom color this doesn't get reflected on my other panels, even though I clicked the option to "Sync color palettes across panels".
What are my options for setting a color palette that gets reflected across my dashboard panels?

So my understanding is that the ability to create and control color palettes doesn't currently exist.
What does the setting option to "Sync color palettes across panels" do?

The Sync color palettes across panels is a setting that makes dashboard panels sync a palette across different charts in some conditions (i.e. same breakdown configuration in multiple panels).
It is in discussion to deprecate it for something better as proposed here: [Dashboard] Deprecate `syncColors` option · Issue #200272 · elastic/kibana · GitHub
It won't be dropped until a solid replacement is found, so it can still be used.
