I have an ES node with mount point of 256 GB, out of which 77% is utilized and another 256 GB mount was added later which is not really utilized. So will shards be moved to new mount based on the data growth?

They won't automatically be moved, rather, new shards created/relocated to the node will go into the emptier path. You could manually accomplish this by using the allocation awareness settings to move one or more shards away, then back, in which case it should go to the other path.
