Just wondering how long would it take to take a snapshot of 1 TB cluster data and how much time to restore the same. Is there any data available in terms of how much time would it take ?
I don't think there are such numbers. It depends on lot of factors, such as the repository type, the network bandwidth, elasticsearch settings...
You should test that for your context. Note that the second snapshot might be a way faster.
