Upgrading data/master nodes to master-only / data-only

Currently have three-node cluster in a single data center; all nodes are
both master/data eligible. I'm trying to migrate to six-node cluster
across three separate DCs for increased reliably with this topology:

DC1:

  1. Master-only
  2. Data-only

DC2:

  1. Master-only
  2. Data-only

DC3:

  1. Master-only
  2. Data-only

Any suggestions for how to upgrade my existing boxes to this to minimize
downtime? Can I reuse existing boxes? What happens when a data-node gets
transformed into master-only? Will it offload its existing indicies?

Or should I just do full cluster backup, startup new boxes, and restore?
