In 5.6 was

But in 7.1 there is no english_morphology plugin.

I think you probably had an additional community driven plugin installed, namely this one https://github.com/imotov/elasticsearch-analysis-morphology - I don't see this one being supported for 7.x though.
The plugin was installed in 5.6. C 6 is not supported.
The question is how to implement it for version 7?
It looks as if the plugin is not maintained anymore by its original author. Unless you want to keep it up-to-date and maintain it, you will not be able to use it with Elasticsearch 7.
