Where can I find any sort of reference for the available parameters for the "Custom logs" integration?

the documentation indeed seems overly sparse. Ingest pipelines | Elasticsearch Guide [8.0] | Elastic happens to use the "custom logs" integration to demonstrate setting up ingest pipelines. Maybe you can glean some insights from that.
