Do we have an option to encrypt the Elasticsearch data (or volume) which is offered as platform as a service on Azure using our own encryption key?
You can encrypt the underlying FS yourself. It's not something that Elasticsearch directly manages for you.
Do you mean I need to manage File System for Elasticsearch offered as PaaS on Azure by myself? How do I setup to use a managed disc? If I can use my own managed disc to store data and logs then I can take care of encrypting that myself.
