what is the difference
Depends on the type of fields and aggregation you are displaying on the data table visualization.
For example: if you are displaying your data as aggregated by a timestamp, on the raw CSV output the timestamp column will export all timestamp in millis or on the original date format of your documents. On the other hand the formatted output will present the same information displayed on the visualization.
The formatted output will always use the formatting option configured on the index-pattern used. Instead the raw output will always use the raw value coming from the data source/document
