How to hide predefined visualization/dashboard templates?

Basically the vast majority of them are not useful to me

I'd like to make the visualize and dashboard view a bit less crowdy, so for example at least hiding/removing all the apache2 templates

If you don't want the pre-defined visualizations/dashboards, you are free to remove them from your installation. A trash can icon appears when you select one or more of them:

yes thanks, but I'd prefer to avoid deleting them manually and rather do it from a config

It looks like you are using at least Filebeat within your stack. Filebeat's configuration allows you to disable loading the sample dashboards by setting

setup.dashboards.enabled: false

in your filebeat yml configuration.
