Is there any way for me to use a timeline to show the mains state (either 0 or 1) for a particular gateway over time (i.e. the y-axis will show the state instead of the count)
Kibana visualizations do not display raw document values. They display aggregated values. For a time line, your data is divided into buckets for each time segment. Metric aggregations calculate values based on all documents in a time segment bucket. So the y-axis does not display individual document values but displays the metric aggregation value for all documents in a time bucket. You can configure different metric values for the y-axis. For example, you could display the max "mains state" instead of count.
