Is there some sort of work instruction how to migrate from a 5 node cluster (all data nodes) with 3 eligable masters to a single node cluster?

Not documented as it's not common. The best option is to remove replicas, then use allocation filtering to exclude nodes one-by-one, then shut them down.
Note though, that we recommend at least 3 nodes for a fault tolerant cluster.
Which version are you on?
Ok, I thought it would be something like this.
Then I assume removing the 2 non-master nodes won't be an issue after allocation filtering.
But how to go from 3 master nodes to 1 regarding the data.
It is 7.6.0.
