Joining a Single Node Cluster with 2 more nodes

Hi,

At the moment we have a single cluster with a single node.
The total data on this cluster spans about 3tb including hundreds of indices created on a daily basis. All indices have been configured with 1 shard and 0 replicas.

Now the task at hand is migrating this data to a 3 nodes, 3 shards, 1 replica cluster - without using snapshots if possible. I understand this is possible although the process itself is a bit unclear. If I join all 3 nodes together will the 3tb data still be available and searchable without changing shard allocation meaning it will remain on a single node with a single shard per index?
