Understanding terminology of kibana keyword

When I upload data to ES, kibana is displaying it as item and item.keyword

Any autocomplete is also not working.

If you don't set the mapping in elasticsearch explicitly - then es does it for you.
This is how it sets the keyword mapping:

Kibana is just pulling that data out of json and displaying the fields here.
