Watcher Actions Greyed Out

Hi,
I am trying to edit email field in the Watcher actions as super user but the fields are greyed out and I am wondering why and how I may fix that? Thank you.

Unfortunately, unless I missed it, these docs dont explain why editing the watches are greyed out. Also, sorry I forgot to mention it's 7.6.2.
