Where I set the variable ELASTIC_CLIENT_APIVERSIONING?

At the elastic documentation I read, that I should set the variable ELASTIC_CLIENT_APIVERSIONING on true. But where I should set the variable? At my device / Windows 11 as environment variable? Or in which configuration file?
On a other documentation I read about a curator.yml, but this file does not exist in my installation (elastic + kibana).

Where I should set this variable?
