Need any documentation which can help in setting up an elk cluster having 2 datanodes and 3 dedicated master nodes (ecs on ec2)

Why do you want 3 dedicated master nodes? And why 2 datanodes?
Why not 3 nodes to start from, all equals first?
May be describe a bit more about your use case, the volume....

i am having a current opensearch domain cluster using 3 master dedicated nodes and 2 data node and i am shifting that to aws ecs cluster now creating elk on ec2 and running that on ecs hence though of starting with this config.
OpenSearch/OpenDistro are AWS run products and differ from the original Elasticsearch and Kibana products that Elastic builds and maintains. You may need to contact them directly for further assistance.
