I'm using the logstash snmp plugin to get ifInOctect and ifOutOctect for all my interfaces. How can I create a scripted field to show the actual bandwidth of the interface from these numbers?

To an extent yes, but that's not what I want. If you try to look at anything over 30 days you get an error because max buckets have been exceeded in doing the calculation. I'd like to be able to calculate the bandwidth and store it in the document.
