it seems sorting in the Discover Search Table does not work in anymore in recent Releases. Tested with 7.9 and 7.10. Is that a known bug ?

That's a little confusing - your discover view is still sorted by time (note the little triangle pointing down next to the "Time" column). If you click it once, this initial sort order is removed and the whole list gets sorted by customer_gender.
You are right. I didn't notice that sorting on multiple columns is supported. Thanks for your help.
